Hello, I’m Jim Glover, That Branding Guy, for Once a Day Marketing™. On our radio show Ask Those Branding Guys, we discussed web marketing with restaurateur with a new restaurant.

Joining us on-air was Patrick Torres who, along with wife Kelly, has recently opened the Black Bird Saloon, a new restaurant in Cerrillos New Mexico. When it was time for a life style change, they decided to use their expertise gained managing numerous restaurants to create a food establishment of their own.

The concept for the Black Bird Saloon had been on their radar for a long time when Kelly saw that a historic 1880’s building was available in Cerrillos. Area history includes turquoise, silver and gold mining and more recently, filming of the movie Young Guns. When creating the saloon Patrick & Kelly worked to keep the look aligned with a traditional, authentic old west bar room. Customer response has been favorable to the feeling created at the Black Bird.

The atmosphere is not the only thing that keeps customers coming back! Black Bird Saloon developed a menu that includes breakfast, lunch and dinner with a unique variety of offerings including lamb meatballs, burgers and flatbreads. Many of the dishes are named for local historical figures. Glover suggested sharing the stories of these characters with customers on table cards to immerse them in the experience.

The saloon is in their eighth week in business and has been exceeding expectations since the inaugural open house. Word of mouth advertising through friends and neighbors has been an effective communication tool. Patrick is learning from customer feedback and making changes as he goes along.

To create some fun PR, Glover shared an idea to send a message to the Young Guns stars that they can eat free at the Blackbird and see if there is a response. Another idea is to create a food eating challenge, this would be a great fit for an old-style eatery.

Patrick’s tip for others build their brand – be passionate about what you do and be patient.
